Classic Zucchini Bread

Ingredients

  • 3 eggs
  • 1 3/4 cups sugar
  • 2 cups shredded zucchini
  • 1 cup canola oil
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 3 cups flour

Instructions

  1. Preheat oven to 350 degrees. Grease and flour two bread pans.
  2. In a large bowl, mix together eggs and sugar.
  3. Stir in shredded zucchini. Add oil.
  4. Add vanilla, baking soda, baking powder and cinnamon. Stir until combined.
  5. Add 1 cup of flour at a time, stirring until flour is completely mixed in. Repeat until 3 cups of flour have all been mixed in.
  6. Pour batter into greased and floured bread pans. Bake at 350 degrees for 45 to 60 minutes.
