Easy and Quick Fiesta Soup Recipe

This quick fiesta soup recipe is slightly spicy and deliciously cheesy – a fun soup twist on the classic Velveeta dip.

Ingredients

  • 1 pound hamburger, cooked
  • 1 small onion, diced
  • 1 can (14.5 oz) corn, undrained
  • 1 can (14.5 oz) pinto beans, undrained
  • 1 can (14.5 oz) petite diced tomatoes, undrained
  • 1 can (10 oz) Rotel tomatoes, undrained
  • 1 pound Velveeta, cubed

Instructions

  1. Brown your hamburger with the diced onion, if not already cooked. Drain grease. 
  2. Combine cooked hamburger with diced onion in a soup pot on stove.
  3. Dump in undrained cans of corn, pinto beans, diced tomatoes and Rotel tomatoes. 
  4. Cube and stir in one pound of Velveeta cheese.
  5. Simmer over low until cheese is melted through and soup is creamy. 
  6. If preparing in a crock pot, simmer on low 2-3 hours or until you are ready to serve the soup.
  7. Enjoy your slightly spicy and truly delicious Fiesta soup!
