Easy and Quick Fiesta Soup Recipe

This quick fiesta soup recipe is slightly spicy and deliciously cheesy – a fun soup twist on the classic Velveeta dip.
- 1 pound hamburger, cooked
- 1 small onion, diced
- 1 can (14.5 oz) corn, undrained
- 1 can (14.5 oz) pinto beans, undrained
- 1 can (14.5 oz) petite diced tomatoes, undrained
- 1 can (10 oz) Rotel tomatoes, undrained
- 1 pound Velveeta, cubed
- Brown your hamburger with the diced onion, if not already cooked. Drain grease.
- Combine cooked hamburger with diced onion in a soup pot on stove.
- Dump in undrained cans of corn, pinto beans, diced tomatoes and Rotel tomatoes.
- Cube and stir in one pound of Velveeta cheese.
- Simmer over low until cheese is melted through and soup is creamy.
- If preparing in a crock pot, simmer on low 2-3 hours or until you are ready to serve the soup.
