Easy Pancake Recipe with Oil

This easy pancake recipe uses oil instead of butter to make delicious homemade pancakes.

Ingredients

  • 2 eggs
  • 2 cups milk
  • 1/4 cup vegetable or canola oil
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 1/2 cups flour

Instructions

  1. In a large mixing bowl, crack eggs.
  2. Pour in milk and oil. Mix together.
  3. Stir in sugar and baking powder.
  4. Add in flour and stir until well combined.
  5. Preheat griddle and grease with bacon grease or oil.
  6. Use a large cookie scoop (or 1/4 cup measuring cup) to pour pancakes onto a hot griddle.
  7. Let pancakes cook until bubbles begin to appear on the pancake.
  8. Flip pancake. Cook until pancake is lightly brown and cooked all the way through.
  9. Serve hot and enjoy!

Notes

  • This is a great basic pancake recipe for mix ins. Mini chocolate chips or blueberries are our favorite add ins!
  • This recipe doubles and freezes well. Allow pancakes to cool completely before freezing.
